ok, it’s official: fall has us going gaga for pumpkin spice. so in honor of #nationalcoffeeday, we thought it only fitting to brew up our own whole30-approved version of this seasonal favorite. after all, there aren’t many things our whole30-loving chief fitlosopher adores more than coffee. think no dairy + no sugar equals no flavor?
behold: our pumpkin spice latte, cleaned up whole30-style.
[whole30 pumpkin spice latte]
1 cup unsweetened almond milk
2 tbsp pumpkin puree
¾ tsp pumpkin pie spice
½ tsp vanilla-bean powder
1 soaked + pitted date
1 oz espresso or ¼ cup brewed coffee
dash of cinnamon for topping
- in a blender, combine almond milk, pumpkin, pumpkin pie spice, vanilla-bean powder + date, blending until smooth.
- pour almond milk mixture into a small saucepan over medium heat + whisk until heated through + frothy.
- pour espresso into a large mug + top with the hot almond milk mixture.
- sprinkle with cinnamon + enjoy the sweet, sweet (but not too sweet!) taste of whole30 pumpkin spice-ification.
