4 recipes powered by coffee to keep you caffeinated


by this point, everyone is well aware that our chief fitlosopher is a bonafide brew addict - no shame in her coffee-grinding game! so we really wanted to give her some new recipes to perk up her java repertoire - recipes that go beyond your average cup o' joe. here are a few of our top non-beverage, coffee-infused percolated picks to give you an extra little pep in your step morning, noon or night.

you've got this coffee smoothie

[morning-grind green smoothie]
serves 1

this combo might seem strange at first, but trust us, you won’t taste any of the green stuff - just a creamy, dreamy coffee-spiked smoothie to switch up your morning caffeine routine.

1 cup unsweetened nut milk
2 big handfuls baby spinach
¼ an avocado
½ frozen banana
1 tsp instant coffee powder
1/2 tsp cinnamon
1/2 tsp vanilla bean powder
1 cup ice cubes
preferred sweetener to taste

  1. blend everything in the blender until smooth, then pour into one of our handy-dandy insulated tumblers to keep those digits delightfully de-frosted.

[paleo coffee-rubbed-bacon BLAT]

serves 1

we know what you’re thinking right now - coffee on bacon?? but if you’ve never rubbed coffee all over your bacon, you’re truly depriving yourself of one of life’s greatest culinary combos. after just one bite, we guarantee you’ll dream about it for days on end. our favorite way to put our coffee-rubbed-bacon to good use? this bread-free BLAT that also happens to be paleo.

2 slices thick-cut uncured bacon
1 tsp ground coffee
1 tbsp hot, brewed coffee
2 tbsp coconut sugar
2 large leaves iceberg or bibb lettuce
2 heirloom tomato slices
¼ an avocado, sliced
smear of homemade mayo, or paleo mayo of your choice

  1. preheat oven to 375 degrees + line a small baking sheet with parchment paper. place bacon on sheet + sprinkle evenly with ground coffee.
  2. stir together brewed coffee + coconut sugar + drizzle half of the mixture on the strips of bacon.
  3. bake about 12 - 15 minutes, then flip the bacon slices, drizzle the rest of the coconut sugar mixture on top + bake another 8 - 10 minutes, until cooked to your liking.
  4. wrap bacon up in lettuce leaves with tomato, avocado + mayo.  

[coffee-marinated grilled chicken fingers]

serves 2 - 4

grilled instead of fried, and soaked in a magnificent coffee marinade, give these grown-up chicken fingers a go the next time you’re jonesing for fast food. t

8 chicken tenders
juice of 1 orange
3 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp coconut sugar
1 tsp instant coffee powder
1 tsp sea salt
½ tsp cinnamon
½ tsp nutmeg
½ tsp ground ginger
¼ tsp cardamom

  1. in a baking dish or large bowl, mix together orange juice, olive oil, vinegar, coconut sugar, coffee powder, salt + spices, then add chicken tenders to coat. marinate in the fridge for 2 to 4 hours.
  2. heat grill to medium-high heat + grill chicken tenders about 3 to 4 minutes per side, until cooked through.

[coffee-almond chocolate bark]

makes about 3 cups bark

this sweet treat is super simple to throw together + a great way to catch a little coffee buzz post-supper.

1½ cups chopped dark chocolate
¼ cup unsweetened almond butter
½ tsp vanilla bean powder
1 - 2 tsp instant coffee powder
pinch sea salt, plus more for topping
½ cup sliced almonds, plus more for topping

  1. in a double boiler (or in the microwave, in 30-second intervals, stirring between), melt chocolate + almond butter, stirring until completely smooth + fully combined.
  2. stir in vanilla bean powder, coffee powder + a pinch of sea salt, then the almonds.
  3. pour chocolate mixture onto a rimmed baking sheet lined with parchment paper + top with more almonds + sea salt, if desired. freeze for 1 hour, or until hardened.
  4. break into pieces + store in the fridge.
